CLAUDIA'S VEGAN BURGER BUNS

Been there, Bun that

Homemade burgers are the best. Once you make the buns yourself, you'll never want to go back to store-bought buns! Common recipes contain milk, sugar and eggs. I have created my own recipe here. It is free from white flour, gluten-free flour can be used if needed. I also use xylitol sugar here, which has no effect on blood sugar levels, and I coat the bread with a vegan egg substitute. Try it out for yourself!

Ingredients

makes approx. 6 pieces.

▽250g spelt flour (or gluten-free flour)

▽1 teaspoon sea salt

▽ 100ml lukewarm water

▽ 50ml lukewarm oat milk (or other vegetable milk)

▽1 tsp xylitol (or other sweetener)

▽ 20g fresh yeast

▽ 60ml olive oil

▽ Sesame seeds for sprinkling


For the glaze:

▽ water (1 part)

▽ Oat milk (1 part)

▽ 1 pinch turmeric

 

Preparation

  1. Heat milk & water to max. 37 degrees. Do the test as follows: Dip a finger into the liquid for 30 seconds. If the temperature stays pleasantly warm, it is perfect. If it gets too hot, you have to wait a little longer.

  2. Mix the yeast and sugar. Leave to stand for 10 minutes and add to the milk mixture.

  3. Now mix flour and salt in a bowl.

  4. Add the yeast mixture and olive oil.

  5. Knead the dough well and form it into a ball. Cover and leave in a warm place for 60 minutes.

  6. Knead the dough again and divide into 6 equal portions. Form balls from each portion and flatten the surface a little. Then place on a baking tray covered with baking paper and let rest for another 30 minutes.

  7. Preheat the oven to 200 degrees.

  8. Mix the milk-water-turmeric mixture. Brush the buns with the mixture and sprinkle with sesame seeds.

  9. Bake in the middle of the oven for approx. 20min until golden brown. Leave to cool. Before eating, cut the buns lengthwise in the middle and warm them again briefly on the griddle.
